Hello. I’ve recently seen on Instagram a few of what I’m calling “currently” posts in which people lists what they’re currently watching, doing, listening to, et cetera. So I’ve decided to incorporate that idea here. Every now and then I’ll make a “currently’ post and list a few of my currents. I think there may be a link up for this also and if so I would love to be get linked up. If you know of it, or are involved with it let a sista know.
Listening to: The thunderstorm outside
Just finished: My health homework
Weather: Disgustingly humid with on and off thunderstorms.
Anticipating: The first day of school. My oldest starts high school, and the middle child begins middle school. I will be a ball of emotions Monday morning.
Entertained by: Baby Squish is trying to crawl. He gets up on his hands and knees and rocks back and forth until he tires himself out. My baby is trying so hard.
Want to cook: I want to try a cauliflower alfredo sauce recipe I came across. I’ll be sure to post it here once I do.
Feeling: Anxious! I had an important meeting yesterday and am dying to receive feedback.
Watching: Hannibal season 1. I am finally getting around to watching this and I’m so excited. Anyone who knows me knows I’m a horror/suspense fan.
There you have them a few of my currents. I may add a few more categories in future posts.
What are you currently doing? Tell me about your current TV shows, things you’re looking forward to, anything you’re currently excited about or looking forward to.
Like many breakfast I the hardest meal for me. It’s not that I don’t like it, I just barely have time to make it before running out the door. When I do have time I can’t figure out what to make, which brings me to today’s recipe: baked oatmeal. I came across this recipe and loved the fact I could make it the night before, and freeze it for later consumption. So I gave it a whirl.
2 cups old fashioned oats
1/2 cup packed brown sugar
1/4 cup chopped nuts (walnuts, almonds, pecans) I used walnuts
1/3 cup drive fruit (raisins, cranberries, cherries)
1 1/2 cup 2% milk (I used coconut milk)
1/2 cup unsweetened applesauce
1 tsp baking powder
2 tbsp melted butter
1 large egg
Preheat oven to 375
In a bowl mix together oats, brown sugar, nuts, dried fruit, and baking powder.
In a separate bowl whisk the milk, applesauce, butter and egg.
Stir into oats mixture until combined.
Coat an 11×7 baking dish with non stick cooking spray and pour batter into dish. Bake for 20 minutes at 375 degrees.
After baking allow to cool and cut into single servings. Wrap in plastic wrap and store in the freezer using freezer bag. In the morning remove from wrap and heat in the microwave for about 45 seconds or until gooey and warm. Enjoy!
I’ll admit I like the taste however I may play around with the recipe more. It didn’t come out as firm as I thought it would initially but the next day it was perfect. Overall I will be making again and once I come up with a recipe I’m completely happy with I’ll post again. Feel free to give it a shot and tweak it to your desire.
What’s your go to breakfast meal? Send me your recipes, I would love to try them.
So about three weeks ago I decided to cut out sugar as much as possible. So no sweets, soda (which I barely drunk to begin with), juice, or other sugary stuff with the exception to use some in my coffee. Now I thought this was going to be easy, and my biggest challenge would probably be chocolate or if I came across some amazing looking cupcake. However that hasn’t been the case. Since I started some days are a breeze. I walk by my beloved Reese’s no problem. Buy some days, wow I really want sweets. The funny thing is it’s not even the normal sweets I crave. I find myself wanting ice cream and whip cream, or soda. However I’m happy to report I have not given in. My will power has overcome and I’ve just said no.
Now I’m not sure exactly how long I’m giving up sugar for. Originally I said about two months or so. I know at the very least I’ll keep it up until October and see then will I continue. If I don’t continue on an all out ban on sugar I may just have a super strict limit.
Have you given up any food? If so why and for how long?
As always sending everyone positive vibes and cheering you on as you go out I to the world and kick butt.
Hello gals and guys, how are you this fine Monday? I’m doing pretty good, well as well as one who’s gotten barely any sleep in 4 days can be. Two out of my four boys haven’t been feeling too well, 1 being the baby. So needless to say sleep has been lacking. However what hasn’t been lacking is my gym time. At first I felt bad heading to the gym for a hour and a half while the boys were sick, but then my family told me I deserve a break. So I took my break and got my gym time in.
First I wanna talk about some progress I made in the jogging (I don’t consider what I do running) department.
This may be slow and not much to some people but to me this is so much progress. A month ago when I began my journey back into jogging I could barely do a quarter mile. Now here I am a month later and this is what I’m doing, 2 1/2 miles in 35 minutes. It hasn’t been easy but man does it feel good to see the improvement.
My second update is that I’m down 2.2lbs from last week. Also I took my measurements and I’m down 1/2 inch to an inch in all areas. After the breakdown I had in the doctor’s office I needed this. I was thinking of keeping track of my weight and measurements here but don’t know if I want to keep it on my About Me page, do a weekly quick post about it, or a little if both. Any suggestions are welcome.
The Mr went to the Warhouse for a fitness camp and bought me back some awesome Flag Nor Fail swag. So happy with my gifts and can’t wait to buy more.
Well I have to get going. I just wanted to wish you all a fantastic week. I’ll be posting a new recipe later this week, and a little review on Guardians of the Galaxy, so check back for that.
As always remember to try your best, at the end of the day that’s all that matters.
